Coconut Caramel Carob Bars

Carob Bars are excellent sources of energy and nutrition, especially after a workout activity, in between meals or to just help you get through the day. Thank you Busy Bees’ Kitchen for another brilliant carob recipe!

Carob Products Used: Raw Carob Powder

  • 1 cup almond meal
  • 1 cup oats
  • 1 cup desiccated coconut
  • 4 tbsps coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla bean paste
  • a pinch sea salt


  • 1 cup coconut oil
  • 1 cup maple syrup
  • 2/3 cup peanut butter
  • 1 tsp vanilla bean paste
  • a pinch of sea salt


  • 3/4 cup melted cacao butter
  • 1/4 cup coconut oil
  • 2 generous tbsps carob powder
  • 3 generous tablespoons cacao powder
  • 3-5 tbsps maple syrup (or to your liking)
  • a pinch of sea salt


  1. Blitz the base in a food processor for approx 2 minutes. Press down into the base of a lined square baking tray.
  2. Blitz the caramel layer and pour over the base. Place in the freezer for 30-45 minutes until set.
  3. Blitz the chocolate layer and pour over the caramel. Place back into freezer for at least 1 hour.
  4. Slice and store in freezer or refrigerator.

Substitutions: For nut-free use sunflower meal in base and tahini in caramel. For gluten-free, use quinoa in place of oats. For fructose-free replace maple with rice malt syrup.
