Coconut Caramel Carob Bars
Carob Bars are excellent sources of energy and nutrition, especially after a workout activity, in between meals or to just help you get through the day.
Ingredients
BASE
- 1 cup almond meal
- 1 cup oats
- 1 cup desiccated coconut
- 4 tbsps coconut oil
- 1 tbsp maple syrup
- 1 tsp vanilla bean paste
- pinch of sea salt
CARAMEL LAYER
- 1 cup coconut oil
- 1 cup maple syrup
- 2/3 cup peanut butter
- 1 tsp vanilla bean paste
- pinch of sea salt
CHOCOLATE LAYER
- 3/4 cup melted cacao butter
- 1/4 cup coconut oil
- 2 tbsps The Australian Carob Co. Roasted or Raw Carob Powder
- 3 tbsps cacao powder
- 3-5 tbsps maple syrup (or to your liking)
- pinch of sea salt
Instructions
- Blitz the base in a food processor for approximately two (2) minutes. Press down into the base of a lined square baking tray.
- Blitz the caramel layer and pour over the base. Place in the freezer for 30-45 minutes until set.
- Blitz the chocolate layer and pour over the caramel. Place back into freezer for at least 1 hour.
- Slice and store in freezer or refrigerator.
Notes
Substitutions: For nut-free use sunflower meal in base and tahini in caramel. For gluten-free, use quinoa in place of oats. For fructose-free replace maple with rice malt syrup.
