We’ve come up with another nutrient powerhouse for you to enjoy and it is our Berry, Chia and Carob Yoghurt Pudding! Get all your superfoods in one sitting by layering overnight soaked chia seeds, blueberries, raspberries, and carob-sweetened yoghurt in a bowl or oversized mug. Chia seeds introduce a little crunch to this healthy treat, along with protein and fiber-rich benefits. The best part? It’s naturally sweetened and absolutely versatile. No refined sugar at all. You can make this the night before, then just grab and go in the morning.
If you want to take this carob pudding to the next level, soaking chia seeds overnight in almond milk (or whole milk for those who prefer dairy) is an excellent option. That’s exactly what did here! This ensures a more flavorful, thicker and creamier consistency. Plus, it introduces another layer of nutritional value into the picture. As always, we recommend following the instructions on your chia seed container to help achieve your desired texture.
What Carob Powder To Use
The appearance and sweetness of this carob pudding will depend on the type of carob powder that you use. Roasted carob powder tends to have a sweeter and darker in color profile. Raw carob powder lends a delicately sweet and slightly less dark in color profile. Whichever you decide to choose, just know that both taste amazingly good!
Ingredients for This Carob Yoghurt Pudding
Frozen raspberries and blueberries can also be used if you want to make this carob pudding a colder snack. It’s excellent for cooling off on those hot summer days. The proportions we listed are simply a guideline that will offer a visually-appealing even appearance in layers. However, indulge or lessen the ingredients based on your preference. If you’d prefer to top this with carob whipped cream, feel free to do so!
